Best of Britain On-Line Cookbook

Cheesy Bubble and Squeak

An old childhood favourite of Pete's; serve this with crusty bread to soak up the juices.

Ingredients:

5 potatoes

2 tbsp olive oil

2 leeks, rinsed and shredded

3 sweet apples, julienned

2 tsp brown sugar

1 garlic clove, crushed

8 oz cabbage, shredded

1/3 cup chicken or vegetable stock

freshly sqeezed juice of 1 orange

1 tbsp fresh thyme, chopped

4 oz parmesan cheese, grated

salt and freshly ground pepper to taste

Preparation:

  1. Leave the skins on the potatoes, and cut them in bite-sized chunks. Boil them in lightly salted water for 5-8 minutes, until just tender. Drain and set aside. (Or be traditional and use leftovers.)
  2. Heat the oil in a large frying pan over high heat, and saute the leeks and apple with the sugar, until golden brown. Add the cooked potatoes, garlic and cabbage, and stir to coat.
  3. Pour in the stock and orange juice, season with thyme, salt, and pepper, and bring to a boil.
  4. Scatter the cheese over top, reduce the heat, and cover. Cook for 5 minutes, until the liquid has been absorbed and the cabbage is tender. Serve at once.
