Coconut Meringues

A coconut twist on a British Tradition.

Ingredients:

2 Egg Whites

120g Tate + Lyle Caster Sugar

100g Desiccated Coconut

Preparation:

  1. Preheat oven to 275°F.
  2. Whisk egg whites until soft then gradually whiskin sugar. Stir in coconut.
  3. Place baking parchment on a baking tray.
  4. Pipe or spoon onto the baking tray. Bake for about1- 1 1/2 hours or until crisp.
