Nectarine Puff

This dessert is like a fruited Yorkshire pudding, puffing up in the oven - and quickly deflating once it's out.

Ingredients:

500 g nectarines, stoned and sliced

2 tbsp orange juice

125 ml brown sugar

crushed seeds from 6 cardamon pods

250 ml flour

125 ml caster sugar

2 tsp baking powder

1 tsp cinnamon

250 ml milk

125 ml butter, melted

Preparation:

  1. Preheat oven to 375°F and butter a large baking dish.
  2. In a saucepan, combine the sliced nectarines, orange juice, brown sugar and cardamon. Bring to a boil, stirring frequently.
  3. Meanwhile, in a mixing bowl, stir together the flour, caster sugar, baking powder and cinnamon. Stir in milk and melted butter, but do not over mix, as the batter should not be smooth.
  4. Pour the batter into the prepared dish and pour over the hot nectarine mixture over top.
  5. Bake for 30-40 minutes, until golden brown and puffy.
  6. Serve hot.
