Nectarine Puff
This dessert is like a fruited
Yorkshire pudding, puffing up in the oven - and quickly deflating
once it's out.
Ingredients:
500
g nectarines, stoned and sliced
2
tbsp orange juice
125
ml brown sugar
crushed
seeds from 6 cardamon pods
250
ml flour
125
ml caster sugar
2
tsp baking powder
1
tsp cinnamon
250
ml milk
125
ml butter, melted
Preparation:
- Preheat oven to 375°F and butter a large baking
dish.
- In a saucepan, combine the sliced nectarines,
orange juice, brown sugar and cardamon. Bring to a boil, stirring
frequently.
- Meanwhile, in a mixing bowl, stir together
the flour, caster sugar, baking powder and cinnamon. Stir in milk
and melted butter, but do not over mix, as the batter should not
be smooth.
- Pour the batter into the prepared dish and
pour over the hot nectarine mixture over top.
- Bake for 30-40 minutes, until golden brown
and puffy.
- Serve hot.
