No  Bake Chocolate Cake

What could be better than chocolate cake, especially one that is this easy to make.

Ingredients:

125g dark chocolate, broken into pieces

1 tbsp golden syrup

125g butter

125g digestive biscuits, coarsely crushed

100g dried apricots, chopped

100g golden raisins

100g glaced cherries, chopped

60g filberts

Preparation:

  1. Line a loaf pan with cellophane wrap, leaving enough to cover over top when pan is full. Set aside.
  2. In saucepan over low heat, melt chocolate, syrup and butter, stirring to mix well. Remove from heat.
  3. Add crushed biscuits, apricots, raisins, cherries and filberts. Stir well.
  4. Pour mixture into lined pan and shake to level. Fold over cellophane to cover top.
  5. Refrigerate for 1-2 hours, until set.
  6. To serve, invert onto plate and carefully remove wrap. Cut into thin slices.
