Roasted Leeks with Blue Cheese
Serve these leeks as a main
course for 4, with a light soup and tangy green salad, or as a starter
for 8.
Ingredients:

leeks
1/4
cup olive oil
2
oz blue cheese, such as Roquefort or Stilton, crumbed
Preparation:
- Preheat oven to 375°F and lightly oil a shallow
baking dish.
- Clean and trim the leeks, leaving 2 inches of green,
and halve them lengthways.
- Place the leeks in the dish, cut sides up. Drizzle
with the olive oil, and scatter the cheese over top.
- Bake for 30 minutes, basting with the oil at least
twice during cooking.
- Season with pepper, serve at once.
