Roasted Leeks with Blue Cheese

Serve these leeks as a main course for 4, with a light soup and tangy green salad, or as a starter for 8.

Ingredients:

8 leeks

1/4 cup olive oil

2 oz blue cheese, such as Roquefort or Stilton, crumbed

Preparation:

  1. Preheat oven to 375°F and lightly oil a shallow baking dish.
  2. Clean and trim the leeks, leaving 2 inches of green, and halve them lengthways.
  3. Place the leeks in the dish, cut sides up. Drizzle with the olive oil, and scatter the cheese over top.
  4. Bake for 30 minutes, basting with the oil at least twice during cooking.
  5. Season with pepper, serve at once.
