Sausage and Apple Toad in the Hole

The original British dinner.

Ingredients:

350g Pork Sausage Meat

1 Granny Smith Apple, grated

Batter:

125g McDougall Plain Flour

2 Eggs

600ml Milk

60ml Vegetable Oil

Preparation:

  1. Preheat oven to 375°F.
  2. Place the sausage meat and apple in a bowl and mix together. Form into 12 balls.
  3. Make the batter by sifting the flour into a large bowl. Add the eggs, then mix. Gradually add the milk, whisking the mixture until smooth.
  4. Add 1/2 tbsp of oil to four individual ovenproof dishes. Place three sausage balls in each dish and cook in the oven for 10 minutes. Alternatively, place the sausage balls in one large dish and cook as above.
  5. Remove the sausage balls from the oven and pour the batter over them. Cook for another 30 minutes, until the batter is risen and golden. Serve with a green vegetable such as French beans.
