Best of Britain On-Line Cookbook

Soup & Sandwiches


Tea Soup

Ingredients:

5 cups vegetable stock

4 large garlic cloves, minced

3 teaspoons dried thyme, crushed

3 cups broccoli, chopped

8 ounces small shaped pasta

1 cup prepared green tea

2 tablespoons lemon juice

salt and freshly ground pepper, to taste

Preparation:

  1. In a large saucepan, combine stock, garlic and thyme; bring to a boil.
  2. Stir in broccoli and pasta, reduce heat and simmer until pasta is al dente.
  3. Stir in tea and continue to simmer for about 2 minutes.
  4. Remove from heat, add lemon juice and salt and pepper, to taste
  5. Serve piping hot.
